For all breakfast fans – here is an easy recipe to make your own hollandaise for the perfect eggs Benedict, one of Pesto’s most scrumptious and popular breakfast dishes:
- 10 tablespoons unsalted butter
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- Dash of cayenne or tabasco
To make blender hollandaise, melt the 10 tablespoons of unsalted butter in a microwave. Put the 3 egg yolks, a tablespoon of lemon juice and 1/2 teaspoon salt in the blender, and blend on medium to high speed for 20-30 seconds, until eggs lighten in colour. Turn the blender down to the lowest setting, then slowly dribble in the hot melted butter, while continuing to blend. Taste for salt and acidity and add more salt or lemon juice if needed. Transfer the hollandaise from the blender to a container you can use for pouring and set it on a warm – but not hot – place on or near the stovetop or in a very low temperature oven (+/- 50 degrees) to warm through for approximately 5 minutes.
*If you heat the hollandaise too much it could split, so be careful to use only warm / tepid temperatures when heating!
