Here is a quick and easy recipe for a homemade batter to cook up your very own restaurant quality fish, calamari or chicken and chips:
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup water – must be ice cold!
- 400g fresh fish
Mix all the ingredients together well, lightly coat your preferred protein and shallow fry in oil heated to 200 degrees.
